1/2 cup vegetable oil
2/3 cup honey
2/3 cup soy sauce
1/2 teaspoon ground black pepper
4 cloves garlic
4 skinless, boneless chicken breasts
3 medium white onions
3 bell peppers, any color
12 skewers (approximately)
2 disposable broiler pans
Cut the peppers and onions into 2 inch pieces.
Cut the chicken into 1 inch cubes.
In a large bowl, whisk together oil, honey, soy sauce, and pepper.
Reserve about 1/3 cup of marinade to brush onto kabobs while cooking.
Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (overnight is ideal).
Soak the skewers in water for at least a half hour.
Thread chicken and vegetables alternately onto the skewers and place in a disposable broiler pan.
Place the pan in the oven on the top rack, with the broiler on low. Leave the oven open a crack to prevent the oven thermostat from turning the broiler off.
Cook for 7 minutes under the broiler.
Flip the skewers and brush with reserved marinade.
Cook for an additional 7 minutes.
Flip the skewers again and brush with more marinade.
Cook for 4 more minutes.
